Thai Prawn Courgette Noodle

Ingredients

  • 3 tbsp toasted sesame oil
  • 540g of prawns
  • 6 courgettes cut with a julienne peeler
  • 4 garlic cloves peeled and finely chopped
  • 3 inch cube of ginger peeled and finely chopped
  • 2 onions peeled and finely chopped
  • 3 tsp chilli flakes
  • 2 tsp fish sauce
  • Juice and zest of 1 lime
  • Himalayan salt and freshly ground black pepper
  • 2 eggs beaten

Method

  1. Heat half of the sesame oil in a pan on a medium heat and add the prawns and cook until they turn pink. Remove them from the pan and put to one side for later.
  2. In the same pan add the remaining sesame oil and add the garlic, onion and ginger and cook for a couple of minutes until soft before adding the lime juice and zest, fish sauce, chilli flakes, salt and pepper and stirring through.
  3. Now add the julienne courgette and stir all the ingredients together and cook for another 4-5 mins until the courgette softens before adding the prawns back to the pan along with the eggs and stirring through and cooking for another 1-2 mins until the egg is cooked.
  4. Top with some fresh coriander and serve.
