BOSH Brownies

These awesome brownies are quick, easy and indulgent. We cut them into ‘bite-size’ squares, this way they last a little longer and you can enjoy them for a few days. We also used our Nutribullet to whizz up the batter, it needed a break from all the kale.

These brownies have been affectionately named ‘Wife Me Brownies’ by a number of our single Fitter Foodies. We’re off to buy a hat!

Mint Choc Chunk Gluten Free Brownie

Ingredients

  • 150g butter
  • 150g dark chocolate (85% cocoa solids)
  • 3 eggs
  • 1 teaspoon of cinnamon 
  • 180g coconut palm sugar (you can substitute raw honey or xylitol)
  • 100g ground almonds
  • 1/2 – 1 teaspoon Himalayan Pink or Celtic sea salt 
  • 1 teaspoon of vanilla extract
  • 80g pecans roughly chopped

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4. Line an 8.5 inch square baking/roasting tin (at least 2 1/4 inch deep) with greaseproof paper.

  2. Melt the butter and chocolate together in a heatproof bowl suspended over a saucepan of simmering water.
  3. Beat the eggs, coconut sugar, vanilla, cinnamon, ground almonds and salt together in a food processor or using a hand whisk until it forms a cake batter.
  4. Once the chocolate and butter have melted, remove from the heat and beat in the egg mixture. Finally, stir in the chopped pecans.
  5. Pour the mixture into the prepared tin and bake for around 20-28 minutes (ours took 26 minutes!) The top of the brownie should have a light brown crust that starts to crack. Before removing from the oven insert a knife/skewer into the middle, it shouldn’t wobble but should still be fudgy in the middle. If in doubt it’s better to remove from the oven check properly and put them back in. It’s easy to overcook brownies.
  6. Once baked, remove from the oven and allow to cool for 20 minutes before cutting into squares
  7. Enjoy!
