Fitter 5 A Day Soup

Green leafy vegetables like kale, spinach and chard are just totally awesome when it comes to nutrients but their bitter taste can be difficult to get on with.  This soup is the answer by smashing it together with tomatoes, carrots, coconut and lots of spices you’ll be loving bowl after bowl and getting you 5 a day servings of veg in no time!

Ingredients

  • 2 tbsp coconut oil
  • 1 onion peeled and chopped
  • 6-7 carrots chopped
  • 5 generous handfuls of green leafy vegetables roughly chopped (kale, spinach, kohlrabi, chard) **we used purple kale and kohlrabi
  • 3 garlic cloves crushed
  • 1 tsp ground ginger
  • 1 tsp cumin
  • 1/4 tsp cinnamon
  • Pinch of chilli
  • 500ml homemade stock
  • 1 can coconut milk
  • 2 tbsp tomato puree
  • 1/2 – 1 tsp Himalayan pink or Celtic sea salt 
  • Freshly ground black pepper

Method

  1. Add the coconut oil to large saucepan on a medium heat and add the onion, garlic, spices, salt and stir fry for 4-5 mins.
  2. Once the onions start to soften add the carrots, green vegetables, stock, tomato puree, coconut milk and stir through.
  3. Bring to the boil and then simmer for about 25 mins.
  4. Once cooked use a hand blender to mix thoroughly and then add boiling water until the soup reaches your desired consistency (we used around a 500ml).
  5. Top with freshly ground black pepper and enjoy.
